Korea Pt 21: KIMCHI!!!

South Koreans consume 1.6 million tons of kimchi a year, at breakfast, lunch and dinner. Until recently, in a tradition similar to an Amish barn raising, villagers joined to make kimchi each fall and stored it underground in jars to last through the winter. Today, most housewives buy kimchi in stores and keep it in an electronic “kimchi refrigerator.” Kimchi is made of various vegetables and contains a high concentration of dietary fiber, while being low in calories. One serving also provides up to 80% of the daily required amount of vitamin C and carotene. Most types of kimchi contain onions, garlic and peppers all of which are salutary. The vegetables being made into kimchi also contribute to the overall nutritional value. Kimchi is rich in vitamin A, thiamine (B1), riboflavin (B2), calcium and iron, and contains a number of lactic acid bacteria, among those the typical species Lactobacillus kimchii Whats your Favorite type of Kimchi?

    France in 2005, adding to the list of food Kimchi harming the human body if eaten.
    In 2005, France banned kimchi from Korea.
    Highly addictive, because it contained a lot of damage to brain cells capsaicin.
    With this announcement, was banned kimchi imports from Korea

    @jangaye95 there is K-Town in LA so i guess there should be some korea minimart there..u can buy kimchi from there. for the taste it depends on the brand, some are a bit more sweet, and for some brand when you buy it it will only taste salty enough and you might want to leave it on the fridge for another 4days just to let it ferment more. the main flavor is sour with a bit of spicy.. for some ppl, they say kimchi has a strong smell, but you will get use to it eventually..

    I just made my first batch of kimchi. I put too much red pepper flakes in it. I honestly like spicey foods. This makes my lips numb and the burn last for half an hour. You can not drink any liquids while your mouth is burning, the burn gets worse. I still love it and can’t wait for it to fully ferment. I used oysters in mine.

    kimchi is great on many grilled meats…had porkchop sandwiches the other night and we put kimchi on it…it was great

    scotland has haggis, south korea has kimchi… if u get what i mean.. only locals adore it.. I really cant take the taste.

    Kimchi is one of the Best things about Korean Food Period!!!! When I was younger I used to hate and despise it now I have six to eight servings of it any time I go to a Korean Restaurant!!!

    i love Kimchi. I put it on my Noodle Soup (Nong Shim). Sadly i cant make it myself so i buy it. ANything fermented is good for you (not alcohol).
